When I first heard the term “water glassing” I thought it sounded like some kind of torture method used on folks who don’t like eggs. 😂 Not at all the case.
It’s simply storing fresh eggs in a hydrated lime and water solution. The best part - no refrigeration required! This method will keep eggs fresh for up to 18+ months. Sounds crazy, I know. But that’s how it’s been done for decades.
You Can Do it! If you live near me, I’ll give you some hydrated lime to get you started.
