Wanna be the talk of the party this Easter? These adorable deviled eggs will be a hit with everyone. I once made these for a baby shower and everyone oooooed and aaaaaaed over them. While it does take some extra effort, it’s worth the results, I think. Here’s the full recipe.

Cooking Tip: If you’re using fresh eggs to make boiled eggs, try steaming them on the stovetop or making them in your Instant Pot. The Instant Pot makes amazing boiled eggs with little effort on your part. Fresh eggs will peel much easier this way. Here’s the Instant Pot recipe for perfect boiled eggs. Speaking of chicks, I’ve been busy filling the incubator and hatching some babies right in my dining room. I’ve sold lots of chicks this week, as the spring fever has hit us homesteaders and farmers. Nothing better than fresh eggs! Popularity of the Black Copper Marans is growing as more people are introduced to their chocolatey-colored eggs. People always ask what hen laid that gorgeous dark brown egg. I select the darkest eggs to hatch in order to have a better chance of producing offspring that will lay dark eggs. With that in mind, keeping the best representatives of the breed is also important, as I want to perpetuate the improvement of my breeding stock as time goes on. This can take years! Each time a hatch occurs, I have to wait about 6 months to see what the results are going to be when they mature. Do they mature to lay a very dark egg? Do they meet the breed standards in size, color, and build? What about the birds temperament? All these things need to be considered. It is a labor of love and a test of patience!

I also find it fascinating to see what you get when mixing different breeds. Did you know if you cross a dark brown egg layer with a rooster carrying blue egg genes, you get an offspring that produces olive eggs? So fun! The color variations are endless.
