What are Microgreens and how can I use them?

Microgreens are the seedling stage of the lifecycle of a plant. They have grown just beyond the sprout stage and are about 3 to 4 inches tall when harvested.

Chefs use them as beautiful garnishes and to add flavor to many dishes, but they are gaining popularity with many home cooks because they are so easy to use and are highly nutritious. They are definitely one of the easiest SUPERFOODS to eat!

Research show us that microgreens are packed with vitamins, minerals and phytonutrients. In fact, they can contain up to 40 times more than a mature vegetable! Since microgreens deliver higher concentrations of beneficial nutrition—without having to add a lot of extra food or calories to your diet—they are a great way to support ongoing health. Bonus: It’s a great way to encourage the kids to eat more veggies, as they like to sprinkle the tiny greens on their food. Got a kid that won’t eat broccoli? Try the broccoli microgreens.

Their nutrient content, bright bold colors, and FANTASTIC TASTE make them an easy way to take your dish to the next level. Make your simple meals really pop with color and nutritional value! Each microgreen variety has it’s own flavor, some mild, some bold, some spicy, so try several different kinds to see what your family likes.

How can you use them in your kitchen? The possibilities are endless, but here are few…

  • toss them in a salad

  • add them as garnish to pasta or chicken

  • mix them in a smoothie

  • put them on a sandwich or wrap

  • use instead of lettuce

  • top off a cheese and cracker

  • use in pesto or salsa

  • add them to scrambled eggs

  • garnish any type of fish

  • top off a baked potato

  • add them to soups

  • use as a pizza topping

Buckeye Barn TN is now offering microgreens, available for delivery, on-farm pickup or at the Halls Farmers Market on Tuesdays from 3-6pm (parking lot next to Arby’s on Maynardville Pike).
