It’s so easy to put a half chicken in to roast for a home-cooked meal.
I like to make a mix of garlic and onion powder, some thyme or rosemary, salt, pepper and olive oil. Generously rub inside and out.
Roast, covered on 300 for about 30 minutes. When meat temp reaches 150, then uncover and crank up the oven to 425 for the last 10 minutes or so. This crisps the skin up nicely without drying the meat. Remove when meat temps is 160 and let sit for 10 minutes before carving.
Then you can pat yourself on the back, throw the foil away and skip the dishes ;)
