The Benefits of Bone Broth
You’ve probably heard that bone broth is good for you. Our grandparents and parents gave us chicken noodle soup when we were sick. They didn’t have the science to know how it worked; they just knew it worked. And they were right.
All the healing stories are true and now we know why this simple food has a ton of health and nutrition benefits. In my opinion, everyone should include it in their diet. Here’s a few reasons why:

While it works to add a little flavor, those supermarket products don’t give you near the amount of nutrition that some good, old fashioned homemade bone broth does. In case you’re wondering what the variations between the broths are, here’s the general gist:
BROTH - thin liquid made from vegetables and some meat (cooked 30 min - 2 hrs) Good for cooking, not much nutrition
STOCK- fuller bodied liquid made from bones and sometimes vegetables (simmered 4 to 6 hrs) Better quality and nutrition
BONE BROTH - gelatinous liquid made from bones and sometimes vegetables (simmered 12 to 48 hrs) This is where the health benefits come in! Best nutrition and taste.
While bone broth takes some time, it’s very simple to make. And it fills your house with a wonderful, welcoming aroma as a bonus!
Having good bones to start with makes a big difference in the quality of your finished product. Using free range chicken will provide you with a powerhouse bone broth and it won’t cost you a thing after you’ve roasted your bird and deboned it.

Here’s my easy recipe. Give it a try! Tweak it to your liking or use whatever leftover vegetables you have in the fridge. Use the end pieces of carrots and celery you typically throw away and use the skins, it all has a variety of nutrients.
One bit of advice when making your bone broth is, don’t skip the fish sauce! I know it sounds weird, but trust me. It does NOT make your broth taste fishy. Instead it lends a beautiful, rich taste that I know you will love. Also, the apple cider vinegar is necessary to draw out the collagen.
